This bread was originally developed as Italy’s answer to the baguette for cafe sandwiches, and it’s done well for itself. Ours has 30% fresh milled flour and just a couple glugs of olive oil for a tender crumb that contrasts nicely with the signature tree bark crust. Per tradition, we’re baking these as strips of unshaped dough. Cut thin for sopping up more oil or slice horizontally for loaded sandwiches.
