Our Anadama is 50% fresh milled whole Glenn and Warthog wheats. We toast and scald the corn grits before adding them to the dough along with molasses. The bread is leavened both with our trusty sourdough as well as a yeasted poolish, and the whole thing is tossed in masa before baking. It’s sweet, dark, wholesome, & delicious.
